Canning Apple Pie Filling! (Recipe)
There’s nothing like serving up a warm slice of apple pie on a chilly fall evening!

Apple Pie Filling
12 cups peeled, sliced, cored apples
2 3/4 cups granulated sugar
3/4 cups ClearJel
1 1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1 1/4 cups cold water
2 1/2 cups unsweetened apple juice
1/2 cup lemon juice
In a large pot of boiling water, blanch apple slices for 1 minute. Drain and keep covered to stay warm.
In a large stainless steel saucepan, combine sugar, ClearJel, cinnamon, nutmeg, water and apple juice. Bring to a boil over medium-high heat, stirring constantly, and cook until mixture thickens and begins to bubble. Add lemon juice, return to boil and boil for 1 minute, stirring constantly. Remove from heat. Immediately fold apples into hot mixture. Before processing, heat, stirring, until apples are heated through.
Process pints for 25 minutes.
Note: You can really taste the nutmeg in this recipe and it’s delicious! BUT if your not a huge fan of nutmeg I suggest cutting down on the nutmeg just a little.
